The core loop — watch temperature and pressure gauges, adjust valves and conveyor speeds, record batch readings, flag out-of-spec product — is exactly what PLCs, inline sensors and SCADA dashboards already do without a human in the chair. What keeps the job alive is the physical part: loading and unloading freezers and chillers, hosing down and sanitizing equipment, clearing jams, swapping ammonia or glycol lines, and reacting when a blast freezer or brine tank misbehaves mid-shift. The main threat here is plant capital automation rather than language AI, which means displacement arrives at the pace of equipment replacement, not software updates.
Mixed — a routine tier and a judgment tier. Setpoint monitoring, gauge logging and conveyor-speed tweaks are already closed-loop on any plant built in the last twenty years, but the same shift includes stacking product into a spiral freezer, breaking ice bridges off evaporator coils and hand-sanitizing a brine tank between runs — roughly half the shift is hands-on, which is why this lands at 11 and not at 5.
Hands-on in uncontrolled environments. You work inside a -20°F blast freezer room and on wet, chlorinated floors, handling ammonia or glycol lines, dragging hoses, clearing jammed product from moving conveyors and manhandling crates — uncontrolled enough to sit at 14, short of 18 only because it is one plant with fixed equipment rather than varied outdoor or customer sites.
No licence, no signature requirement. No state licence gates this work; the plant's HACCP plan, PSM program and the refrigeration engineer or QA manager who signs off carry the legal weight, and your batch temperature log is evidence for someone else's signature rather than your own credential — the 3 reflects only that ammonia-handling and forklift training are documented requirements.
Anonymous artifact production. Frozen fillets and chilled dairy leave the line with no name attached; the buyer relationship belongs to sales and QA certificates, and nobody downstream knows or asks who tended the chiller.
Executes defined procedures on defined inputs. Most calls are written down for you — hold the product if core temp misses spec, shut down and evacuate on an ammonia alarm, call maintenance on a compressor fault — with the real discretion limited to judging when a drifting reading means a fouled coil versus a bad probe and how much of a run to quarantine, which is a 6 rather than a 2.
